It's hard to believe we are almost halfway through the first week of Nita's Natural Reset Detox program! Here's the lovely and delicious raw, vegan lasagna that our meal prep clients are enjoying this week:
This raw, vegan lasagna has none of the refined carbs of a regular lasagna, which, I might add is totally fine if we're not detoxing. But what it does have is all house made by me! And I was so happy with how it came out. It contains sun-dried tomatoes in the fresh marinara sauce, sweetened with a little whole dates, fresh spinach and tomatoes, dehydrated mushrooms, freshly sliced zucchini in place of the traditional lasagna noodles, a rich house-made vegan pesto sauce, and a layer of fresh, house-made vegan ricotta! It packs TONS of flavor.
It can be eaten cooled or warm, but I prefer it warmed a bit. If you don't have a dehydrator at home, you can warm it at your oven's lowest temperature in a glass dish with the oven door open. However you like it, I know you will enjoy it! Not pictured, I did add some vegan parmesan cheese that I created at the last minute as a garnish.
So with delicious entrees like this and the five salads on last week's menu, hopefully you will stick to the plan. Only two more weeks to go.
