I love porridge for breakfast! It’s quick to make, very filling, and satisfies me all morning. But I realized a few years ago that the way I liked my porridge (or breakfast cereal) was just too heavy, made me feel sluggish all morning, and contained too much sugar!
Don’t get me wrong, oatmeal porridge is one of my favorites, and also one of the healthiest breakfasts you can make, topped with berries or your favorite fruit. But sitting in a desk job, I needed a solution for my daily desire for simple, humble breakfast porridge.
There are lots of varieties to breakfast porridge. When I get bored, I change it up often. But today, I’d like to introduce you two of my new faves.
Today, I want to show you my homemade granola fruit cereal bowl with greens!
I was amazed and instantly happy about all the sweet, tangy, savory flavors yummy in my mouth simultaneously. And the overall good feeling I got from knowing that I was fueling both energy and nutrition for most of the day. In fact, this porridge is so rich and nutritious, yet doesn’t weigh you down. Here’s the latest one I made below:
SuperFood Breakfast Cereal – Watercress, fruit and nuts, granola
This cereal also has:
Homemade granola, watercress, Almonds, Strawberries, Papaya
See why I didn’t need any sweeteners?
Another key to this delicious bowl, is making the watercress the base and the granola one of the garnishes. Why, would I do that? Well, that’s the secret to getting more greens into the meal and less carbohydrates; which are another form of sugar to my body.
Here’s a quick tip: if you are suffering from hyperglycemia or blood glucose issues like diabetes, even a slight increase of sugar in your food can raise your blood glucose. So this dish helps you to NOT have to worry about that. Isn’t that great?!
Honestly, I chose these ingredients because it’s what I had on hand. But you don’t have to use them.
Stay tuned for Part 2 where we will talk about the nutrients this cereal bowl delivered.
